November is National Vegan Month which gives us an opportunity to think about incorporating Meatless Mondays into our menus.
For a balanced diet, it's a great idea to plan a plant-based day of meals.
This allows one to focus on eating the recommended servings of fruits and vegetables. A meal filled with fruits and vegetables provides necessary nutrients and fiber that are often missing from the typical American diet.
The biggest concern is always - where do I get protein? That answer is simple. Many vegetables contain protein like beans and legumes. Peas are also a good source of plant-based protein. Protein can also be found in nuts and seeds. Tofu is not the only source of non-animal protein.
So what does a plant-based meal look like in school?
Try a veggie burger made from taco day leftovers like brown rice, black beans, corn, salsa and cilantro.
Top your salads with garbanzo beans instead of diced chicken (and leave the cheese, just this once).
Consider trying ready-made plant-based items, like Gardein meatless meatballs for your pasta bar.
So, in celebration of National Vegan Month, why not try these simple ways to easily incorporate plant-based entrees into your menu.
